For a good brew

• Use good water. Water that hasn't boiled too much, rich in oxygen.
• Boil the water, but don't let it over-boil. Add the tea to the water (not the water to the tea) and turn down the heat.
• Steep for exactly 17 minutes. The tea will settle in the teapot. This indicates your tea is brewed.
